Title : Director of Food & Beverage
Section : Food & Beverage
Superior : General Manager
Subordinate : Food & Beverage personnel
(1) Main Duties & Responsibilities
- The Director of Food & Beverage is responsible to the General Manager.
- Responsible for Food and Beverage operations of the hotel to ensure the achievement of high standard quality of products, guest experience, employee satisfaction and achievement of departmental revenue and profit goals.
- Adhere to local regulations relate to Food Safety & Hygiene or other compliance requirements, local policies and procedures, as well as hotel standard.
(2) Explanation of detail duties:
1. Check inventory of silverware, glassware and chinaware at storeroom (with Chief Steward).
2. Evaluates, develops and recommends methods of operations and ensures that standards set by management are maintained.
3. Initiates or supervises the preparation of food & beverage forecasts and other reports relative to staffing, service, production and sales.
4. Directs supervisory meeting for the continual improvement of service, courtesy, production and efficiency of operations.
5. Directs in evaluating food & beverage menus, recommending changes for increased sales.
6. Maintains an appearance of order lines, cleanliness and proper setup of all food & beverage facilities.
7. Assumes proper maintenance of all equipment of food & beverage facilities, arranging for immediate repair or replacement of damaged items.
8. Ascertains that the safety standards are properly maintained in the food and beverage facilities.
9. Directs and supervises all employees in the food & beverage department and department staffing and scheduling.
10. Maintains or exceeds forecast sales and to control costs and expenses in order to achieve the projected departmental profit.

REQUIREMENTS:
- A bachelor's degree in business or a related field
- At least 5 years experience in related fields at 5 stars Hotels / Resorts
- Strong Leadership & Management skill & Communication skill
- Good command of spoken and written English with strong computer skills.
- Initiative, courteous, hard working and attentive to details.
- Can work under high pressure
