Thoroughly understand VIP guest profiles (preferences, dietary restrictions) and event details (BEO). Direct staff in setting up dining rooms and tables according to Fine Dining standards and specific personalized requests.
Personally greet and serve the event Host. Act as the sole point of contact between the guests and the Kitchen/Bar teams to ensure smooth and well-coordinated meal pacing.
Execute complex service techniques (e.g., professional wine consultation and service, tableside carving/portioning, flambé). Handle arising situations with skill and utmost discretion.
Supervise and guide subordinate staff (waiter/waitress/casual) within the PDR area, ensuring professional service attitudes, adherence to standard procedures (SOPs), and absolute respect for guest privacy.
Process accurate and secure payments. Supervise room clearing, cleaning, and re-setting for the next service. Submit post-event reports to management.
College/University Degree in Hospitality Management or a related professional certificate.
Minimum of 2-3 years of experience in the F&B industry.
At least 1 year of experience in a Supervisory/Captain role within Fine Dining restaurants, or specific experience in VIP/PDR areas of 4-5 star hotels.
