* Kitchen Operations
- Oversee daily prep and service across kitchen sections.
- Ensure consistency in food quality, portioning, and presentation.
- Maintain high levels of cleanliness and organisation.
* Team Support
- Supervise and train junior chefs, apprentices and porters.
- Lead the team during shifts and deputise for the Head Chef.
- Support with rota planning and staff development.
* Food Safety & Hygiene
- Enforce food safety, allergen, and HACCP procedures.
- Maintain records and ensure full compliance with environmental health standards.
- Conduct checks and coach staff on hygiene practices.
* Stock & Cost Control
- Support stock rotation, portion control and minimising waste.
- Assist with ordering and supplier coordination.
- Monitor kitchen costs in line with budget targets.
Yêu cầu
- Minimum 3 years' experience as a sous chef or in a similar role in a high-end kitchen.
- Strong leadership and training skills.
- Excellent knowledge of culinary techniques, food safety, and kitchen management.
- Calm and effective under pressure.
- Commitment to consistency, creativity and team development.
- Experience in private members' clubs or luxury environments is a plus.
