Job Scope:
Manage and supervise daily pastry production according to approved recipes, product standards, and production plans.
Ensure consistency in taste, texture, appearance, and portioning across production batches and points of sale.
Inspect raw materials and finished products, identify quality issues, and take corrective actions.
Ensure compliance with food safety, hygiene, and HACCP/FSSC 22000 standards.
Research and develop new pastries, desserts, and bakery products in line with the brand direction.
Improve existing recipes, production processes, baking techniques, and presentation standards.
Conduct product trials, tastings, and evaluations before official launches.
Develop, standardize, and regularly update recipes, specifications, and production procedures.
Manage, assign, train, and coach the Pastry team to ensure smooth production operations.
Control raw material usage, yield, food cost, and production waste; participate in product costing.
Coordinate with QA, Purchasing, Warehouse, and Operations teams to resolve production and quality issues.
Prepare regular reports on production, quality, waste, and improvement actions; support internal/external audits.
Communicate in English with Management, foreign Chefs, suppliers, and partners when required.
Requirements:
Bachelor's degree in Pastry, Bakery, Culinary Arts, Hospitality Management, or a related field.
5-7 years of professional experience in Pastry/Bakery, including 3-5 years as a Supervisor, Team Leader, or equivalent.
Experience in a bakery, hotel, restaurant, café chain, pastry shop, or professional food production environment.
Experience in R&D, new product development, recipe improvement, and recipe/specification standardization.
Good English communication skills.
Strong knowledge of Pastry/Bakery techniques, ingredients, production processes, food safety, hygiene, and HACCP.
Strong team management, training, work assignment, and production schedule control skills.
Ability to control food cost, portioning, yield, and waste.
Creative mindset with strong attention to detail, proactive and hands-on, able to work under pressure.
Prefer: Professional certificate in Pastry/Bakery, experience in large-scale production, and French or Japanese language skills.

🕐 Working hours: 09:00 AM - 05:00 PM | 1 day off per week (flexible depending on schedule)
